Freia Barry has joined The Montessori Place as our resident chef. Freia trained in Paris and is acknowledged as one of Rick Stein’s ‘Food Heroes’ in his BBC book.  We are absolutely delighted that she will be cooking fresh seasonal vegetarian food for those children staying for lunch and taking us all a little more thoughtfully into the wonderful world of food.

Here is a sample menu she has prepared.

Monday

Fresh English asparagus dipped into soft-boiled free-range eggs

homemade sourdough bread

Rhubarb crumble with vanilla custard

Tuesday

Broccoli and potato cakes with tomato and wild garlic salsa

Wholemeal bread and homegrown salad.

Elderflower jelly

Wednesday

Jersey Royal potatoes with mini seasonal vegetable quiches

Jam heart tarts (with jam made in the autumn)

Thursday

Spinach and sorrel pasta with local Sussex cheese

Date and honey flapjacks or lovely organic yoghurt

Friday

Soup day!

Children to bring in a beautiful seasonal vegetable,

Blended with fresh seasonal herbs and a fantastic homemade warm loaf.
